View: cherry, garnet rim.
Nose: aromas of ripe fruit and spices.
Mouth: velvety, long and balsamic.
ORIGIN DENOMINATION: Calatayud.
VINEYARD: the grapes come from vineyards grown in the calatayud mountains, at an altitude ranging from 800 to 1100 meters. The vineyards are very old, between 60 and 100 years old and support an extreme climate that causes a very low yield of the vineyard, a slow ripening of the grapes and a late harvest.
UVAS: Garnacha Tinta.
AGING: aged for 12 months in American and French barrels.
ELABORATION: the harvest takes place during the first and second week of October. For its production, the must ferments in stainless steel tanks at a controlled temperature of 24oC for 20-25 days with its skins. After fermentation, maceration takes place for 21 days, also with the skins.
WINE PAIRING: roasted, grilled lamb, grilled red meats, beef, cold cuts and Iberian acorn ham.
RECOMMENDED SERVICE TEMPERATURE: 16OC
