Vinification of the Doppio Passo Bio Primitivo
This organic red wine gets its full-bodied taste through a second fermentation. While some of the Primitivo grapes are still allowed to ripen and intensify on the vine, the first part, fresh and fruity, is fermented in a stainless steel tank. After the first fermentation, the late harvested grapes are added to the mash to start a second fermentation there. The primitivo thus gains incredible abundance and structure. For the Doppio Passo, only the best grapes grown according to organic standards are vinified. A wonderful Doppio Passo in organic quality.
