Famed for his incredible Sherry cask maturation policies, Billy hand-selected this exceptional Pedro Ximénez puncheon to be bottled. As a rich and complex spirit, GlenAllachie stands up well to aging in rich Spanish oak Sherry casks. The wood has bestowed decadent notes of dark roasted coffee and sticky raisins, coupled with hints of fruit cake and sweet cinnamon on this sophisticated single malt.
Colour: Intense Chestnut
Aroma: Bursting with toffee apples and brandy snaps, with notes of maple syrup, hazelnuts, dried red berries and coffee beans.
Palate: Waves of dark chocolate, raisins and ginger, followed by strawberry praline, black forest gateau and treacle-soaked almonds, with a hint of nutmeg on the finish.
